Salmon & Coriander Dahl Curry


Well I don't often put a recipe out but here's one for you to try if you're a lazy cook like me. It's super easy peasy and I found it one day via Google from the BBC Good Food site when I hadn't done the shopping and I had a bunch of coriander in the fridge and a pack of salmon and I wasn't feeling particularly inspired and nor did I want to pop to the shops. 


Ingredients 


  • 75g red lentils
  • 400ml chicken stock
  • 1 small onion (grated) I blitz in one of those chopper things as I am super lazy
  • 2 tomatoes (chopped)
  • 1/2 tsp teaspoon turmeric
  • 1 tsp garam masala, plus extra for the salmon
  • 1 pinch red pepper flakes (or more depending on tastebuds)
  • 1 small bunch of coriander (chopped)
  • couple of salmon fillets

Instructions

  • Put first seven ingredients (I love that bit) in a pan and bring to a simmer.
  • Cover and cook for 20 mins until lentils are cooked.
  • Stir in the coriander
  • Rub salmon with garam masala and season with a little salt and pepper
  • Cook for about 7-8 mins till just cooked. (I grill it).
  • Break in to chunks and stir through the dahl.
  • Serve with rice and anything else you like.

Last Note :

  • What I love about this recipe is that it's so simple and makes a really good weekday dinner.
  • The curry itself is not a hot one so children should be able to enjoy it - I just sprinkle extra chilli flakes in for the hubs after I dish out the boys' portions.
  • Anyone got any really good simple recipes to share? I'm not a foodie so find it difficult to get inspired about cooking and I just want nice simple recipes which I can do in extra quick time.

  1. That looks yummy. For easy, quick recipes I do a lot of chuck some fish in the oven with veg or salad, fajitas are quick too: fry with spices and serve with tortillas, salad, cheese etc.

    1. I do the fajitas thing sometimes but for some reason, I seem to end up with lots of faffing and a bit of a bomb site in the kitchen when I do those. I need to cook more fish really but I like to get it fresh from the market and I haven't been going as often recently. I'll have to remedy that!

  2. I'll try that, I love bothlentils and salmon equally....agreed though, any recipe must be under 10 steps and ready in 20 minutes, right?
    That said, I do a lot of easy pastas and risottos (I'm Italian after all) but the other staple is I buy a rostisserie chicken and I make a whole oven tray of baked veggies for the week (in the winter I love root veg-current mix is sweet potato, carrots, fennel and any other weird root veg I can find). I just sprinkle with salt, pepper and chillies and olive oil and roast the hell out of them on high for 20 mins. They're so good!

    1. All ingredients and instructions should ideally fit on one page ... and in big writing is even better! I find making risottos quite hard work as I seem to be on constant standby for that and the boys don't go a bundle on it so it seems like a lot of work to be met with pained faces. I never thought of doing enough veggies for the week though - I've been known to pop to the shops every couple of days as I never know what I'm having as I'm that unorganised. That's one of my goals this year - better food planning and less wastage.

  3. I'm the laziest cook in the whole world but can manage one-pot or one-tray meals, so I'm definitely going to try this. And Sara's rotisserie chicken and baked veggies sounds good too... yum.

    1. You're not the laziest cook. I am. I still remember your suggestion of a little lemon juice, olive oil and parmesan to dress over veggies/salad. It was yum. I tried it and the hubs gave me the thumbs up.

  5. Hi, I did this last night, was delish. Found the daal had to be seasoned but it was lovely. I did it with wholegrain rice and quinoa, centre of the plate, topped with the dahl, topped with the salmon darne topped with some greek yoghurt and fresh chopped coriander. Looked far more fabulous than the effort involved.. thanks! keep em'comin'. Audrey :-)

    1. Wow - you got this food thing sussed haven't you? So far I haven't had to season the dahl which must be down to the stock cube - I use a whole one for the 400ml of stock. Your quinoa and wholegrain rice sounds very healthy. I'm a white rice heathen kind of chick. ;p
